Square Plates — Never Discard
Strictly brief all catering-provided waiters: square plates must always be separated from trash and sent directly to the washing station — never thrown away or mixed with disposables.
Coordinated Clearing Rounds
Own-provided and catering-provided waiters must clear together — no duplication of effort, no gaps in coverage.
Drinks Station — Never Empty
Assign one dedicated person to monitor and refill the drinks station throughout the entire grazing period.
Plate Set Stock Level
Always maintain at least 20–30 pre-prepared banana leaf plate sets (banana leaf + tissue + fork) ready at the handout station at all times.
Clear Ownership — Queensland vs Ate Bella
Queensland and Ate Bella's teams must each own their respective grazing table sections clearly — no confusion, no overlap in responsibilities.
Grazing-to-Dinner Transition Signal
Coordinate the exact signal with Jash at 4:15 PM so the transition to dinner setup begins cleanly without confusion.
